The uncoated surface sears beautifully without any sticky residue, and the 27x27 size fits a whole fish fillet flat with room to spare. Cooks evenly across the base, which is exactly what I needed for my weekend stir-fries.

The square shape is actually great for cooking multiple steaks, and the heat distribution feels even across the whole 27cm surface. It's a solid pan, though I wish the handle stayed a little cooler during longer cooking sessions.
