The heat distribution across the 24cm pan is even enough for a perfect omelet, no hot spots. Cleanup is a breeze since nothing sticks to the five-ply surface. A solid upgrade from my old nonstick set.

Both pans have that solid, heavy feel that distributes heat beautifully, and the uncoated surface is a dream for getting that perfect fond for pan sauces. I've had no issues with sticking since I learned to preheat them properly.
