I was skeptical about spending this much on a fry pan, but the five-ply construction really does heat evenly — no hot spots when I sear chicken thighs. The 28 cm size is perfect for a family of four, and cleanup is easier than I expected for uncoated steel.

The uncoated surface sears meat beautifully without any nonstick coating to worry about scratching, and cleanup is just a quick deglaze away. I've used it nearly every day for a month and the pan still looks brand new. It’s heavy enough to feel solid but not so heavy that my wrist aches.

Uncoated steel means I had to relearn how to fry eggs without them sticking, but once I got the heat right it sears meat nicely. It's heavier than my old pan and the handle gets warm near the base, so it's decent rather than amazing.
