This pan heats up so evenly, I finally got a perfect golden sear on my salmon without any hot spots. The five-ply construction makes it feel incredibly solid and well-balanced in hand.

The uncoated surface is a bit trickier to clean than my nonstick pans, but the heat distribution is so even across the 28cm base that it’s worth the extra scrub. I’ve been using it for stir-fries and the five-ply feels solid without being too heavy to handle.
